A recipe for Pumpkin Pie Spice + another Meal Plan Monday!

Happy Monday y’all!  How is the weather where you are? Around here in Colorado, the leaves are beginning to turn colors in the mountains and the cooler weather has started to blow in at night. Starbucks has begun to sell Pumpkin Spice Lattes, so I’d say it’s Fall y’all!

September and October seem to be pumpkin spice season, so I thought I’d share a quick recipe for making your own pumpkin spice mix. I prefer to make my own over purchasing it because I get to control the exact flavors that go into it. I like mine with a bit more cloves and cinnamon. You may like yours with a bit more of a bite from the ginger. By blending your own, you can play around with it and decide exactly what you want your pumpkin pie spice to be!

The other benefit to making your own is that you don’t run out as quickly. I typically keep all the spices that go into this blend on hand for various recipes throughout the year, so I can mix up exactly how much pumpkin spice I need right when I need it for a recipe. That way my spices stay fresh and ready to use individually throughout the year instead of a once a year blend like pumpkin pie spice. If you don’t keep these spices on hand in your spice cabinet, I’d suggest checking out your local spice store, health foods store or wherever bulk items are sold and buying just a small amount of each of these for this mix. Pumpkin Pie Spice

Ingredients

Scale
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon allspice
  • 1/4 teaspoon nutmeg

Instructions

  1. Combine spices well in a small bowl or jar.
  2. Use immediately or store in an airtight container for up to 6 months.
  3. Yields 2.25 teaspoons. Recipe can be doubled or tripled as desired.

Notes

  • Increase quantities of individual spices to suit your preferred tastes.
  • Gluten-free: This should be gluten-free. Check your spice jars.
  • Vegetarian/vegan: This should be vegan.

Monday: Black Bean Tostadas with Green Apple Salsa from Taming of the Spoon (gluten-free, vegan)

Tuesday: Lemon & Spinach Salmon Patties from The Wetherills Say I Do (gluten-free) 

Wednesday: My Tex-Mex Chicken Chili (gluten-free)

Thursday: Skinny Chicken Enchilada Stuffed Chilies from Mariah’s Pleasing Plates (gluten-free, vegetarian option) – stuff these with the leftover chicken chili!

Friday: Pizza Night with Thai Chickpea and Veggie Pizza from Veggies Don’t Bite (gluten-free if using gf crust, vegan) – note: I used store-bought peanut sauce, and my favorite pizza dough recipe. 

Saturday: Date Night – Eat Out.

Sunday: Y.O.Y.O. (You’re on your own.)

    Thanks for the recipe, Stephanie! Since I don’t use a ton of pumpkin pie spice (and mine is expired), it’s nice to know how to make my own with what I have on hand instead of having to buy more each season! I’ve pinned this, too!

    I always love using your meal plans for my weekly planning. Thank you so much for sharing! And I love this recipe for making your own pumpkin pie spice! I try to make my own spice combinations as much as possible instead of buying them pre-made, so this is so helpful!

      I’m so glad you enjoy them! And it’s so fun to make spice blends. I love to put them in little cork stoppered bottles and give them as seasonal gifts. Some friends bring them back for refills. Haha.

      It’s so delicious! (I make the recipes a week ahead of time so I know they’re awesome.) I used carrots, zucchini, and onions from my garden. And I saw the owls in World Market and just HAD to buy them. They’re a bit unpractical because they don’t fit down the next of a spice jar, but the cuteness totally makes up for that.

      You’re welcome! Spice mixes are some of my favorites to make. And the chicken chili photos may not look like much (I need to re-shoot them), but that is my husband’s #1 requested meal. I bet you’ll love it. 🙂
