What do you think? I am so in LOVE with the logo that my friend Jessica Triggs designed for me. (I was actually so excited that I snuck it out early last week on a few photos when I wasn’t supposed to.) I had never intended to keep the old header as long as I did when I designed it as a placeholder. Since we just passed my Blogiversary, I figured it was time to finally replace it with something finished. I seriously can’t stop opening the page just to look at it again. Squee! I think everything is in working order, but let me know if there’s anything that broke with the new design implementation. 

Pumpkin Spice Kettle Corn - Making your own kettle corn on the stove is super easy and it just got better with the addition of Pumpkin Spice!!

In honor of my new look, I thought I’d update the most popular recipe on my site – my stove top kettle corn!  This time it’s topped with all the flavors of pumpkin spice. You can whip some up just in time for your Halloween party! I took some to a birthday party over the weekend and people started politely taking some in a small cup just to taste. This quickly morphed into each person dumping heaping mountains onto their plates and shoveling it in like crazy. (So be warned, and maybe make a second batch if you plan to share.)

Pumpkin Spice Kettle Corn

Description

Your favorite sweet and salty treat just got a Fall upgrade with pumpkin spice!!


Ingredients

Scale
  • 1/4 C Coconut oil (recommended) or Canola Oil
  • 1/2 C Yellow Popcorn Kernels
  • 1/3 C White Sugar
  • 3/4 tsp Kosher Salt

Added After Popping

  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon allspice
  • 1/4 teaspoon nutmeg

Other

  • A large, 6-8 quart pot with handles and a tight-fitting lid or Whirley Pop popper
  • Apron
  • 2 oven mitts
  • wooden spoon
  • parchment lined cookie sheet

Instructions

  1. Gather all other materials and ingredients.
  2. Mix spices together in a small bowl and set aside.
  3. Line a large cookie sheet with parchment paper and place near the stove.
  4. Put on the apron to prevent oil splatters on clothing. (trust me)
  5. Measure out popcorn kernels, sugar, and 3/4 tsp salt into a small bowl or cup.

If using a stovetop pot

  1. Measure out coconut oil and heat in the pot over medium-high heat along with 3 tester kernels. Cover with a lid.
  2. Put on oven mitts. When tester kernels have popped, remove lid, dump in the sugar, unpopped kernels, and salt from the bowl and give it a quick stir. Cover with lid.
  3. Using thumbs to secure the lid, occasionally swirl pot over heat to keep sugar from burning.
  4. As popcorn begins popping, pick the pot up and give it a quick shake every few seconds until popping begins to slow. About 3-4 minutes.
  5. Once popping has slowed to 1 second between pops, remove from heat and dump it quickly onto the waiting parchment lined cookie sheet. (A partner to remove and hold the lid helps a lot for this step)
  6. Shake spice mixture over the top of the warm kettle corn and stir to distribute evenly.

If using a Whirley Pop

  1. Add the coconut oil, sugar, unpopped kernels, and salt to the whirley pop.
  2. Put on oven mitts.
  3. Heat over medium high heat while cranking the handle slowly.
  4. Once popping has slowed to 1 second between pops, remove from heat and dump it quickly onto the waiting parchment lined cookie sheet.
  5. Shake spice mixture over the top of the warm kettle corn and stir to distribute evenly.
  6. Serve immediately.
  7. Makes 6 cups (but that’s probably just 1 serving.)

Notes

  • I prefer to mix my own blend of “pumpkin spice”. Don’t have all the spices above? You can substitute 2 teaspoons of your favorite pumpkin pie spice.
  • Gluten-free: This is gluten free!
  • Vegan: This is vegan!

      I think you do! I’m pretty sure everyone NEEDS this kettle corn in their life. If I could hand it out on the street and not be given funny looks, I’d do that right now to bring more Fall love to the world.

      Haha. You bet! I’ll trade you some kettle corn for some lemon brownies. Mmmm. I need an excuse to make them for some event so I don’t eat the whole pan like I did with the kettle corn. I had to make 5 batches before I was able to get some on (digital) film for this post.

      Be warned, it’s addicting, and especially easy in the whirley pop. I’d love to hear how it turns out for you! (I saw your other comment and was kind of thinking a whiskey pop should be a thing… Maybe a fun flavored beverage instead of a popcorn maker?)

    Your blog looks great and so does your kettle corn! My kids would love it! We’ve never tried making kettle corn but there is a place at our Village Fair days that sells their homemade Kettle corn and we always buy it. But I’d rather learn to make it. I’ll be sharing on my facebook page tomorrow!

      Thanks for the share! It’s amazingly easy to make kettle corn at home. The sugar melts into the coconut oil and puts that awesome thin sugar coating over everything. I think it’s slightly different from the giant kettle stuff since you don’t have an open flame and cast iron kettle, but just as yummy. You could also buy a bag of kettle corn at the fair then add the pumpkin spice seasoning yourself if you wanted.

      Thanks Nicky! I’m sure you know this, but this recipe won’t actually work in an air popper. The sugar and oil have to mix to make the amazing crusty shell on the popcorn that makes kettle corn kettle corn. You could totally just mix the pumpkin spice mix together with a bit of sugar for your air popped corn, or make this one on the stovetop. 🙂 (Which is probably what you meant, but just in case, I wanted to warn you.)

      I could live on popcorn too. We got a Whirley Pop recently and it’s so dangerously easy to make kettle corn now. (Stovetop is pretty easy too, we just didn’t do it as much.) Let me know how it goes when you try it!
