This Slow Cooker Ham and Spinach Frittata recipe is perfect for your next brunch get together!

Slow Cooker Ham and Spinach Frittata - Sustaining the Powers-2Can you believe Crocktober 2015 is almost over already?! I’ve been having a blast coming up with new crockpot recipes for you each week, and you can bet I will keep coking in my crockpot at least once a week even after Crocktober is officially over. As is the case with many food bloggers, I have so many different ideas that I don’t always have the time to make and photograph to share here. Sometimes you just have to eat them and realize that there are always more recipes to come. 

This past weekend we hosted our second annual Powers Octoberfest where we get a big group of beer-loving friends together (+ 1 couple’s brand new baby) and go on a walking tour of several of the different awesome local Denver breweries that are in walking distance from our house. We always start out the day with a big brunch so we can make sure to fill our stomachs before we head out for beer tastings. I wanted a substantial breakfast item to share with everyone, but with it being Crocktober, I wanted to try to make something new in the crockpot.

I had no idea you could make a frittata in the slow cooker! This Ham and SPinach Frittata would be great for weekend brunch.

This slow cooker ham and spinach fritatta took a bit longer to cook than I had originally planned on, but it was well worth it in the end. When you make a fritatta in the slow cooker, all the flavors meld together so beautifully, so every bite is full of ham and spinach flavor. It’s just not a depth of flavor that you can get when you make a fritatta quickly in the oven or on the stove. I had just enough time to snap a few quick and hastily styled photos before our friends happily gobbled this up and said it should go on the blog. (Thanks guinea pigs! friends!) 

I had no idea you could make a frittata in the slow cooker! This Ham and SPinach Frittata would be great for weekend brunch.

I will definitely make this frittata again and again for a fun brunch or dinner because it was really just a matter of dumping in the filling, cracking and beating the eggs, and pouring the eggs over the top in the slow cooker. Easy peasy. I added a slow cooker liner before I put the eggs in, and I’m really glad I did because it lifted out beautifully and allowed me to run a spatula around it and slide it right off the plastic liner and onto a serving board. I have not tested this recipe without the slow cooker liner, but I will say that if you try it without, do be sure to add some cooking spray to the crock and be prepared to give it a bit of a scrub down later on.

Slow Cooker Spinach and Ham Fritatta

Ingredients

Scale
  • 10 large eggs
  • 8 oz diced ham
  • 10 oz fresh spinach
  • 1/2 green bell pepper, diced
  • salt and pepper to taste
  • 1 slow cooker liner

Instructions

  1. Line a 6 qt oval slow cooker with a slow cooker liner and spray with cooking spray for easy egg removal.
  2. Add ham, peppers, and spinach into the crock.
  3. Crack the eggs into a bowl, add salt and pepper and whisk until fully scrambled.
  4. Pour over ingredients in the crock.
  5. Cover and cook on High for 1.5 to 2 hours, or until the center of the frittata no longer jiggles when the crockpot is shaken. (Actual cook time will vary with altitude and slow cooker temp, so keep an eye on it and note your time for the next time you make it.)
  6. Lift out of crock, slide out of the liner using a spatula, and slice into squares to serve.

Notes

  • Gluten-free: This is gluten-free.
  • Vegetarian: Swap the ham for some other veggies or cooked potatoes.
  • This should also work in a 4qt slow cooker. I haven’t tested it but you’ll need to reduce the recipe in order for it to cook in a reasonable amount of time. I’d start with 1/2 this recipe and go from there.

    You had mentioned something about your current frittata recipe and so I thought I would stop by and check it out! Looks crazy good to me! Great way to sneak some spinach in on the hubby too – lol – mine says he doesn’t like spinach – but I say he just doesn’t know when he is eating it. lol. Love the crocktober recipes!!! Only a few more days though!!! 🙁

      Thanks Wendi! If you want to sneak the spinach in, be sure and add it in first so it’s not quite as obvious. I put it on top to show it off on this one. Cover it with extra ham and he won’t notice. 😉 I’m sad Crocktober is almost over! I almost want it to be Crocktober all the time.
