 Rosemary Sea Salt Roasted Almonds are a great salty, smoky and slightly sweet snack recipe for your next lunchbox or party.

Rosemary Sea Salt Roasted Almonds are the perfect snack for my afternoon pick me up!

If you’re like me, you get hungry in the afternoons. Sometimes you might even get hangry (hungry+angry). Or maybe you’re the type that gets sleepy when your blood sugar gets low. I often end up as a mix of these, and really enjoy having an afternoon snack on hand to tide me over between lunchtime and dinner. 

Rosemary Sea Salt Roasted Almonds are the perfect snack for my afternoon pick me up!

The absolute best afternoon snack (in my opinion) is a big handful of nuts. It’s got just enough calories to keep you from saying mean things out of hunger, but it’s not a big enough food that you won’t be able to turn around and eat dinner later on. Plus nuts have all sorts of good for you fats and omega-3 fatty acids.

Plain almonds are fairly delicious on their own, but I love upgrading my snack a bit with a few simple spices. The combination of rosemary, a bit of brown sugar, sea salt, and the smoky/spicy dash of chipotle and smoked paprika really takes these nuts over the top. You also can’t beat the smell these rosemary sea salt roasted almonds make when you roast them in your oven. I want to make some daily just so I can have the aroma as my home air freshener.

I made the rosemary roasted almonds in these photos to take to a Broncos party over the weekend. (Sadly, we lost and are now out of the running for the Super Bowl this year.) They were such a huge hit that everyone made me promise to share the recipe on my blog this week. So, here you go friends!

Description

Rosemary Sea Salt Roasted Almonds are a great salty, smoky and slightly sweet snack recipe for your next lunchbox or party.


Ingredients

Scale
  • 2 cups raw almonds (not roasted or salted) Find these in most stores that have bulk bins.
  • 2.5 Tablespoons olive oil (or one egg white)
  • 2 Tablespoons dried rosemary (I love the Spanish cracked rosemary from Penzey’s Spices.)
  • 1 teaspoon fine sea salt
  • 2 tsp brown sugar
  • 2 dashes chipotle pepper or chili powder (optional-add more for extra spice)
  • 1/2 tsp smoked paprika (optional)

Instructions

  1. Pre-heat oven to 325 degrees.
  2. Line a cookie sheet with parchment paper.
  3. In a small bowl, combine olive oil and brown sugar until sugar has dissolved. Add in the rosemary, sea salt, chipotle, and paprika.
  4. Place the almonds into a bowl (preferably with a lid) and pour the oil and spices over them. Toss to coat the almonds evenly.
  5. Pour coated almonds onto the parchment lined cookie sheet and spread out into a single layer.
  6. Bake in the oven for 25-30 minutes, stirring halfway through the roasting process.
  7. Allow to cool to room temperature and enjoy!
  8. Store in an airtight container.

Notes

  • Makes 2 cups.
  • Gluten-free: These are gluten-free!
  • Vegetarian/Vegan: These are vegan!
  • Paleo: Leave out the brown sugar.

    These sound amazing! Rosemary is one of my favorite flavors, but I would have never thought to combine them with almonds. This is such a great snack idea!

    Ohh Yum! We eat nuts all the time, but I have yet to experiment with roasting them.

      You should try it! It’s really just as easy as sticking them in the oven on a pan and then pulling them out again. Plus, raw almonds are often cheaper than roasted, salted ones, so it can save money too!

    these look amazingly delicious. And i get sleepy+hangry in between every single meal… not exaggerating! it’s horrible. these might be the solution!!

      They have seriously helped me a ton! I eat lunch around 11 and hubby doesn’t get home until 6 ish for dinner, so I have a big gap between meals. For a while I was just doing plain salted almonds as my snack, but these are way more fun! I hope you love them. 🙂

    What if I the rosemary I have is still fresh? I have brought in my potted rosemary following the recent frosts where I live. It’s still so lush and aromatic! Want to make this recipe and take to Myrtle Beach where my extended family and I are celebrating Thanksgiving! Thank you!!

      The fresh should work okay, it just may not stick as well as the dried rosemary does. Mince it up pretty small and maybe add a bit extra and you should be fine. 🙂 Enjoy Thanksgiving at the beach!
