Description

A savory waffle with bacon and chives


Ingredients

Scale
  • *2/3 cup white flour (or gluten-free)
  • *1/2 cup yellow cornmeal
  • *3 Tbsp granulated sugar
  • *1 Tbsp baking powder
  • *1/4 tsp salt
  • 2 Tbsp vegetable oil
  • 1 egg
  • 3/4 cup milk (or non-dairy milk)
  • 1/4 cup crumbled bacon
  • 2 Tbsp dried chives (4 tbsp fresh)
  • 1/2 cup shredded cheddar
  • *(1 box of Jiffy corn muffin mix may be substituted for the flour, cornmeal, sugar, baking powder, and salt.)

Variations (choose 1 addition)

  • 3/4 cup shredded sweet or regular potatoes
  • 1 (4.5oz) can diced green chilies, drained
  • 1/2 can of corn

Instructions

  1. Combine dry ingredients together in a medium bowl.
  2. Add in remaining ingredients and stir thoroughly until batter is smooth.
  3. Prepare as you would normal waffles according to the directions on your waffle iron. (Or make pancakes if you don’t have an iron.)
  4. Makes 4 large waffles.

Notes

  • It may expand a bit more than regular batter, so be conservative when you pour it in the iron.
  • Top with chili, fried chicken, pulled pork, a poached egg, pot roast, a burger, or just some warm honey butter or syrup.
