I hope you all had an amazing Halloween! We spent the evening at a party with our next door neighbors eating brain cheesecake along with some other yummy treats and just hanging out around a fire pit. I love that we have next door neighbors who are such good friends! Last night we had some friends over for another of our regular Walking Dead watch party nights. I’m not going to spoiler anything here, but there was zero resolution about a MAJOR unfinished plot line. I’m hoping we get some clues next week or I’m pretty sure there’s going to be rioting.

Now that Crocktober is over, I’m looking forward to sharing more recipes for my favorite holiday – Thanksgiving! So you can look forward to more Thanksgiving recipes and Thanksgiving prep tips here soon. Hopefully I can ramp up to twice a week posts for the holiday season as I’m finishing a number of web design projects and I’m almost done with clients until after the new year. But for now, I’ll leave you with just a new meal plan today. Have a lovely week!

Meal Plan Monday 11/2-11/8:

This meal plan is designed to feed approximately 4 adults at each meal or two adults with lunches left over. Feel free to double or add to it as needed.  **You’ll need to open it with the free Adobe Reader App (Android or iOS) to be able to use the check boxes on mobile, so install that first if you don’t have it already.**

Monday: My Bean and Cheese Pupusas (gluten-free, vegetarian, vegan option)

Tuesday: My Falafel Waffles with Roasted Eggplant (gluten-free option, vegetarian, vegan option)

Wednesday: Fall Chicken and Rice Casserole from My Cooking Spot (gluten-free)

Thursday: Eggs in Pergutory from Loaves and Dishes (gluten-free, vegetarian option)

Friday: Pizza Night! Apple butter pizza with Arrugula and Prosciutto from Kitchen Meets Girl (gluten-free if using gf dough, vegetarian option)

Saturday: Date Night – Eat Out.

Sunday: Y.O.Y.O. (You’re on your own.)

      We’ve been inundated with leftovers from Crocktober, so we had nothing but leftovers for last week and I haven’t tried out your casserole yet, but I’m super excited to eat it this week!! I’ll attempt to take a photo, though daylight saving time is wreaking havoc with dinner photo time. (It was getting dark at 4:45 yesterday!)

    Well, let me try this again. 🙂 After fat finger typing it out on my cell phone (cause sweet hubby was using the computer) Discus didn’t recognize me and I lost the whole thing! That is a shame too – because, I thought I was being pretty funny! I might not catch that wave again. 🙂 Anyway, Stephanie, HAPPY BIRTHDAY and HAPPY BLOGIVERSARY! You deserve the happiest, best and most awesome day ever! I am so so lucky to have met you (you posted on one of those linky party things just above where my post appeared). I followed your link because I saw that it was something helpful about understanding WordPress – which as you know, is incomprehensible to me. Thank you JESUS for enticing me to follow that link! Stephanie, you have been such a blessing to me! You are my “go to gal” for all things computer and have freed me from the part I find most troublesome about blogging. I am wishing you the best ever trip around the sun and much much success with your blog. Oh! AND, my favorite post from this year is that walking dead brain thing (cheesecake?) because, honestly, that is just so quirky. It makes me laugh every time I think about it. And that Walking Dead Brain Cheesecake is one of my favorites too! So fun (and easy) to make and eat and it’s a bit funny and gory at the same time. Haha.
