No Bake Butterscotch Cookie Butter Bird Nests

These fun Butterscotch Cookie Butter Bird Nests treats are made with creamy butterscotch morsels and craveable cookie butter that’s poured over chow mein noodles and topped with candy eggs. 

Cookie Butter and butterscotch? No way! These bird nests are always a huge hit to make with the kids.

Yep, you read that correctly – butterscotch cookie butter bird nests. And they’re no bake to boot! I put these together earlier this week for a small group treat, and wanted to put a fun twist on the traditional haystack recipe by swapping the peanut butter for cookie butter. (Because what treat isn’t made better with the addition of cookie butter?)

Bird nests treats are some of my favorites to make every Easter. I have fond memories of putting them together with my mom and sister each year so we could take them to school for the Easter party. One year in Elementary school, I had a classmate ready to believe that these were actual birds nests we were eating. At least until she saw the “M” stamped on the “egg.”

These are one of the best treats to make for a last minute get together because you only need a few minutes in the microwave and a tray to set them on. I used to make them in my dorm room, with my kids in my classroom at school, and even once made them in the tiny microwave in my cubicle when I forgot about a company potluck.  (You know you’re destined to be a food blogger when you make butterscotch bird nests in your cubicle rather than purchase some pre-made treat at the store.)

You’ll notice that I made many small ones, but also a giant one because I got lazy I plan to use it to top a cake for our Easter dinner. I think it will look so cute and unique on top of a simple round cake, and it means that all I have to do is stack the two layers, frost it, and pop this on top! Easy Peasy.

Butterscotch Cookie Butter Bird Nests

Description

These fun bird nest treats are made with creamy butterscotch and cookie butter poured over chow mein noodles and topped with candy eggs.


Ingredients

Scale
  • 1 bag (12oz) chow mein noodles
  • 1 bag (11oz) butterscotch chips
  • 1 cup Trader Joe’s Cookie Butter or Biscoff spread (about 2/3 of a jar)
  • A medium bag of your favorite small egg-shaped candies. (I used peanut M&M’s, but there’s many options.)

Instructions

  1. In a microwave safe bowl, combine the butterscotch chips and cookie butter.
  2. Microwave on half power for 1.5 minutes.
  3. Give it a good stir, then microwave again for 45 seconds on half power.
  4. Stir again until the last of the butterscotch has melted, or return to the microwave for another 30 seconds on half power if it still needs more time.
  5. Add the chow mein noodles to a medium bowl. Pour the butterscotch cookie butter mixture over the top of the noodles and gently stir to coat the noodles.
  6. Give it just a minute to cool down so you can handle it if it’s too warm to touch.
  7. While the mixture is still warm, use your fingers or a large spoon to gently shape the coated noodles into round nest shapes on a parchment or silpat lined cookie sheet. You can make them as large or as small as you’d like. I like to leave a little dip in the center to hold the eggs.
  8. While the butterscotch is still wet, add the candy eggs on top and gently press to get them to stick.
  9. Allow nests to cool on the counter or in the fridge until the butterscotch has set again, about 10 minutes.
  10. Store in an airtight container.

Notes

  • Gluten-free: Replace the chow mein noodles with gluten-free pretzels and swap the cookie butter for peanut butter or nutella.
  • Vegetarian: These are vegetarian.
  • Vegan: Use vegan butterscotch or chocolate chips.
