Meal Plan Monday Week 8 Collage

Okay y’all, I know I usually have a new recipe and such to share with you on Mondays, but I’ve spent most of this week in bed with a fever and some sort of yucky virus, so I haven’t had any time to do any cooking or take any photos. I’m not ashamed to admit we ate canned soup and/or takeout for most of the past week. (At least until the weekend when my amazing hubby made these delicious cinnamon raisin biscuits with vanilla glaze for breakfast because he’s sweet like that.) I’m starting to feel better, and should have the rest of the week on track. 🙂 

Thankfully I usually put the meal plans together on Mondays a week ahead of time, so all I have to do is schedule this post for you this week. Enjoy!

Meal Plan Monday 2/23-3/1:

This meal plan is designed to feed approximately 4 adults at each meal or two adults with lunches left over. Feel free to double or add to it as needed.  **You’ll need to open it with the free Adobe Reader App (Android or iOS) to be able to use the check boxes on mobile, so install that first if you don’t have it already.**

Monday: My Bacon and Chive Cornbread Waffles with a side of my Oven-baked Eggs (gluten-free, vegetarian if you leave out the bacon) – I love a good breakfast for dinner night. I also love making things in my waffle iron besides plain waffles. Add on a side of these easy oven-baked eggs and you’re good to feed a whole crowd in less than half an hour. 

Tuesday: Turkey, Cheddar and Apple Hand Pies from the Etsy Blog (gluten-free if using gf pizza dough, vegetarian sans turkey) – Did you know that Etsy had recipes? (They call the series Eatsy – totally fitting!) This one is super simple, but really delicious. It was create to use up some Thanksgiving leftovers, but I made it with some thick-cut deli turkey and it was perfect. 

Wednesday: Skinny Slow Cooker Chicken Tikka Masala (Gluten-free, optionally vegetarian/vegan) – I LOVE tikka masala. This recipe came together after much testing and it’s still one of my favorites. Probably even more so because all you have to do is combine the ingredients and dump them into the crock pot. (Don’t let the long ingredient list scare you. Once you gather the spices and seasonings, it’s just a matter of measuring, stirring, and dumping them in!)

Thursday: Chickpea Tacos with Avocado Cream from Amuse Your Bouche (Vegetarian, gluten-free option, vegan option) – These tacos come together super-fast, but they’re still full of flavor. (All you have to do is mash some chickpeas and whirl some avocado cream in your food processor or blender!) (Note: This recipe is from the UK so a 400g tin of chickpeas = 15oz can, and “fresh coriander” means cilantro on this side of the pond. My shopping list reflects this.)

Friday: Perfect Oven-Baked Potatoes from I Wash You Dry and a toppings bar of your favorite toppings (gluten-free, vegetarian/vegan) – Topping bars are a favorite around here. I plan on using some leftover tikka masala on top of my baked potato, but you can come up with any of your favorite combos. Here’s some great topping ideas if you need them. 

Saturday: Date Night – Eat Out.

Sunday: Y.O.Y.O. (You’re on your own.)

      If you ever end up in Denver, you are most definitely invited for dinner! (That would be so fun!) A friend of our says we have ruined her marriage because her husband always wants to come over here for dinner each night. Haha.

    Tikka Masala sounds like a wonderful meal on a cold night in Texas which is starting to include rain at 31 degrees. Thanks for the recipe!
