Gluten Free Sweet Potato Medallions with Goat Cheese and Balsalmic Glaze

Today I’m posting a recipe that I shared as a guest on another blog. One of my good friends, Elizabeth, has a lovely lifestyle blog that I mentioned last time in my Tapenade Egg Salad post.  She has an incredible closet and is often posting fabulous outfits of the day.  I’ve joked with her about becoming my personal stylist, and she just might come over and put together outfits for me one day.  Elizabeth, if you’re reading this, you know I’ll trade you yummy food for your services. 🙂

Over the Easter holiday, I worked with her to write up my recipe for Sweet Potato Medallions with Micro Greens, Goat Cheese, and Balsamic Glaze.  I loved how low key it was for me to be cooking and her to take all the photos. I think I should get a photo assistant all the time (or a cooking model). This is also the first time I’m actually in one of my recipe posts. (Besides the occasional thumb or hand.)  She makes me look good!
