This Fig and Pig Flatbread is my quick and easy go-to for a foodie picnic or fancy appetizer.

Last week my friend Meghan from Cake n’ Knife came over to have a picnic with me. And not just any picnic. This was a no holds barred food bloggers’ foodie picnic which means we dreamed up the most delicious, fancy picnic foods we could think of and then spent a couple hours cooking up a storm, staging the food, dancing in my kitchen, drinking La Croix (I’m an addict!) taking these photographs, and then chowing down on our picnic feast. Probably my favorite day in June.

Somehow I ended up making the more “healthy” items while she brought it with the booze and dessert. (You have to have a signature cocktail and dessert at a foodie picnic right?)  Since cherries are in season, she decided to whip up this AMAZING Very Cherry Amaretto Sour. I could seriously drink these all. day. long. because they taste just like a cherry limeade. That may be quite dangerous because there’s a decent amount of amaretto in them. She may or may not have cut me off.

I decided to wrap up my favorite strawberry avocado salad in a portable spring roll (recipe coming soon!) and put together this crazy good fig and pig flatbread. I really like making flatbread “pizzas” because they’re super quick and are usually really great either hot or cold, so that makes them perfect for a picnic lunch! I used some shortcuts for this one by purchasing fig butter rather than using fresh figs (Trader Joe’s for the win!) and using pre-cooked bacon. I may or may not eat more bacon now that I can buy it pre-cooked and pull out a couple slices.

Figs and bacon were seriously made for each other. If you remember my Bacon Marinated Pork Loin stuffed with dried figs, you know that I love to combine figs with anything pig. I am a sucker for that salty/sweet combination! I topped it all off with some fresh arugula and pine nuts to give it a nice blend of textures and maybe make up for the bacon with lettuce. Fig and Pig Flatbread

Ingredients

Scale
  • 2 large naan flat breads
  • 1/4 cup fig butter or fig jam
  • 6 slices cooked bacon
  • 1/4 cup goat cheese
  • 1 handful arrugula
  • 2 tablespoons toasted pine nuts (optional)


Instructions

  1. Divide the fig butter between the two flatbreads and spread it out with the back of a spoon like you sauce a pizza, leaving a bit of a crust around the edge.
  2. Tear or dice the bacon into 2 inch pieces and spread it on top of the fig butter.
  3. Sprinkle the goat cheese on top.
  4. Toast the flatbread in a toaster oven or broiler for approximately 2-3 minutes, or until the crust begins to crisp up and the goat cheese begins to melt. (Leave the door cracked and watch it very closely if you use a broiler.)
  5. Sprinkle with arrugula and pine nuts.
  6. Slice it up as desired and serve!

Notes

  • Gluten-free: Can be made with GF tortillas, pizza crust, or flatbread instead of naan.
  • Vegetarian: Swap in your favorite bacon substitute. (Crispy shallots, roasted mushrooms, or roasted potatoes would sub well here.)
  • Vegan: Swap out the bacon, use a vegan flatbread and leave off the goat cheese.
