Today is the second installment of Low-Carb Crocktober 2018 where I share weekly slow-cooker meal plans for the month of October. You can find the archives for the entire Crocktober series here.

I don’t know about where you are, but Fall is coming out in full force this week in Colorado. I woke up to temps in the 40s and there is a potential snow on the 10 day forecast. This kind of weather is my absolute favorite for Crocktober! This week I have a couple of STP favorites from my archives and a few new recipes to try. I’m especially excited for the pumpkin and coconut soup! 


Crocktober 2018 Week 2 Meal Plan:

Monday: Low-Carb Slow-Cooker Reuben Soup – Sustaining the Powers (8 hours, gluten-free)

Tuesday: Slow Cooker Sausage and Peppers – Everyday Maven (6 hours, gluten-free)

Wednesday: Low-Carb Pumpkin and Coconut Soup – Ditch the Carbs (8 hours, 9g net carbs/serving, gluten-free, vegetarian)

Thursday: Leftovers

Friday: Slow-Cooker Pizza Stuffed Chicken – Sustaining the Powers (4 hours, gluten-free)

Saturday: Eat Out

Sunday: Y.O.Y.O. (You’re on your own.)
