This Slow Cooker Pizza Stuffed Chicken is easy, low-carb, gluten-free, and sure to be a huge hit!

Pizza Stuffed Chicken. In your slow cooker. Nobody will realize that it's low-carb and gluten-free.

First off, I think I need to say THE BRONCOS ARE GOING TO THE SUPER BOWL!!!!!! What a totally crazy game that was! I planned to write this post while I watched, but my eyes were glued to the screen the entire time. Fingers crossed we do much better in the Super Bowl this year than we did 2 years ago. I don’t think Peyton Manning is going to last another season for us.

Ya’ll, it’s so hard to make things look pretty after you take them out of the slow cooker. Forgive the ugly chicken shots. 

Okay, now that is out of the way and we can move on to pizza stuffed chicken in the slow cooker! This recipe is going on the books as one that will always make me laugh. I know I’ve mentioned before that Hubby is also an excellent cook and he will help out or make dinner fairly often. One of his specialties is a stuffed chicken dish, so he’s pounded out chicken for me before. I start to make this recipe and ask him where the meat tenderizer is. He comes into to the kitchen, holds up his fists, and says, “Here’s your meat tenderizer!” Apparently he’s been pounding out chicken breasts by going Hulk smash on them with his fists for the last 5 years of our marriage and I had no clue! I about died laughing! (I love this man.) But it worked really well, so if you don’t have a meat tenderizer, toss your chicken in a ziploc and work out your anger issues with your fists.

We’ve loved this Pizza Stuffed Chicken recipe from DIY Budget girl for a while now, but I really wanted to convert it to work in our slow cooker so I could leave it cooking while I went out to run errands and not have to worry about getting home in time to put things in the oven. (Plus I promised more slow cooker recipes this year!) I tested a couple batches with a meat thermometer and it was ready to eat at about 4.5 hours on Low or  2.5 hours on High, though slow cookers vary, so use your own judgement. It’s not quite an all day fix it and forget it slow cooker recipe, but you are able to leave it for at least a few hours, so it could be a great one for a weekend lunch or something to prep and pop in during afternoon naptime and then have ready to eat later. It could also be a super one to serve at your football watch party!

Low-Carb Slow Cooker Pizza Stuffed Chicken Breasts

Ingredients

Scale
  • 6 boneless, skinless chicken breasts (medium to large breasts with rib meat work best)

For Filling

  • 2 cloves minced garlic (or 1 tsp garlic powder)
  • 2 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded mozzarella cheese
  • 1/2 cup pizza sauce
  • a handful of mini pepperoni

For Topping

  • 1/2 cup pizza sauce
  • mozzarella cheese
  • Mini Pepperonis or your other favorite pizza toppings

Instructions

  1. With the smooth side of a meat tenderizer (or your fists I suppose), pound the chicken breasts flat until they’re about 3/4 inch thick.
  2. Lay them out on a plate or sheet of parchment with the bottom side of the breast up.
  3. In a small bowl, combine the garlic, onion powder, salt, pepper, mozzarella, sauce, and mini pepperoni to make the filling.
  4. Spoon an even amount onto each breast. I find it easier to keep it in a horizontal line like you’d fill a burrito rather than spreading it all over the whole breast.
  5. Roll each chicken breast around the filling and place it seam-side down in the bottom of a slow cooker. Squish them together a bit if you need to, and a bit of overlapping is fine.
  6. Spread the remaining sauce over the rolled chicken and top with cheese and pepperoni.
  7. Cover and cook for about 4.5 hours on Low or 2.5 hours on High, or until the internal temp reaches 165 degrees. (You don’t want dry chicken, so do check on it.)

Notes

  • Serve these whole, or serve them sliced for an impressive presentation. Or dice these up and make some awesome pizza chicken tacos or pizza chicken nachos!
  • Gluten-free: These are gluten-free.
