I’m not going to share a full shopping list this week because Thanksgiving, holiday celebrations, and leftovers take up the majority of shopping this week, but I did want to share a few quick light and healthy recipes for the beginning of the week. We eat so well on Thanksgiving that I never regret loading our meals with lighter options in the days before the feast.

What are you most thankful for this year?  I am most thankful for my support network of friends and family (“framily” if you will.) So many things have happened and changed, both good and bad, this year and we have felt loved and supported through it all. Even amid all the physical blessings we have received, the things I cherish the most are definitely these relationships, and my Hubby is especially at the top of the list! Love you all! Happy Thanksgiving!  

Meal Plan Monday 11/23-11/29:

This meal plan is designed to feed approximately 4 adults at each meal or two adults with lunches left over. Feel free to double or add to it as needed.  **You’ll need to open it with the free Adobe Reader App (Android or iOS) to be able to use the check boxes on mobile, so install that first if you don’t have it already.**

Monday: Grilled Ginger-Sesame Chicken Chopped Salad from Cooking Classy (gluten-free if using gf dressing)

Tuesday: 15-Minute Coconut Curry Noodle Soup from The Woks of Life (gluten-free if using gf fish sauce and curry paste)

Wednesday:  My Roasted Beet Salad With Goat Cheese and Beet Pesto Vinaigrette (gluten-free, vegetarian, vegan option)

Thursday: Happy Thanksgiving!

Friday: Thanksgiving Leftovers.

Saturday: Date Night – Eat Out.

Sunday: Y.O.Y.O. (You’re on your own.)
