 Another yummy Meal Plan Monday is here!Weekly printable gluten-free and vegetarian-friendly meal plans with shopping lists!

Welcome back to a new week! They sure have been flying by lately. I’ve seen a lot more Fall recipes and Halloween pins popping up on Pinterest, but I’m not ready to jump into Fall mode quite yet, so we’re sticking it out with a few more simple summer recipes for the meal plan this week. I’ve still got a lot of garden tomatoes and cucumber left to use up, and we’ve got a few more weeks of grilling left before the weather and leaves turn. (Though native Coloradoans are crazy and they grill year round – even in the snow!) 

This week has had some fun squirrel adventures for our neighborhood. We have had dumpsters in our alley ways for many years, but the city recently removed them and gave us each individual trash bins instead to hopefully cut down on the illegal alleyway dumping. An unintended side effect is that the local populations of squirrels and raccoons that had been using the dumpsters as their smorgasbords are now without an easy food source. Without them, they’ve been on the search for any food they can get to. More than a few neighbors have new holes in their window screens with food missing from their kitchen and a couple even had a squirrel surprise attack in their pantries! I have a feeling my new tomatoes won’t last long. Anyone have tips for getting rid of crazy urban squirrels?

This meal plan is designed to feed approximately 4 adults at each meal or two adults with lunches left over. Feel free to double or add to it as needed.  **You’ll need to open it with the free Adobe Reader App (Android or iOS) to be able to use the check boxes on mobile, so install that first if you don’t have it already.**

Monday: Spicy Tuna Avocado Panini Melt from My Cooking Spot (gluten free if using gf bread)

Tuesday: Breakfast for dinner! Breakfast quesadillas with smashed avocado, eggs and spinach from The Perfect Pantry (gluten-free if using gf tortillas, vegetarian)

Wednesday: Easy Crock Pot Chicken Caesar Sandwich on Ciabatta from The Pinning Mama (gluten-free if using gf bread & gf dressing)

Thursday: Greek Chicken Wraps from Taste and Tell (gluten-free if using gf tortillas, vegetarian if you skip the chicken)

Friday: Orange Herb Chicken Kabobs with Blueberry Balsamic Sauce from Plating Pixels (gluten-free) – This sauce is awesome!! 

Saturday: Date Night – Eat Out.

Sunday: Y.O.Y.O. (You’re on your own.)
