I’m finally back home and bringing you this week’s Meal Plan Monday featuring tons of veggies!

I’m so happy to be back with y’all this week because it means life is returning to normal! After a two week trip to Texas and then an unexpected family emergency, I’ve been itching to get back in my kitchen and whip up some homemade food. I’m especially excited for a menu with tons of veggies. (I’ve eaten so much fast food lately – yuck!) This week’s meal plan doesn’t come with my usual recipe, but hubby is traveling for work this week, so I have tons of hours to cook up a storm in the kitchen for next week. (Anyone want to come taste-test for me?)

Also, a heads up: next Monday is another monthly recipe challenge with my friend Jenna at A Savory Feast. We will be hosting The Popsicle Challenge, so get your popsicle ideas (and your tastebuds) ready to go! 

 

Meal Plan Monday 5/18-5/24:

This meal plan is designed to feed approximately 4 adults at each meal or two adults with lunches left over. Feel free to double or add to it as needed.  **You’ll need to open it with the free Adobe Reader App (Android or iOS) to be able to use the check boxes on mobile, so install that first if you don’t have it already.**

Monday: Ranch Noodle Broth Bowl from Seduction in the Kitchen (vegetarian, gluten-free with gf noodles and ranch mix, vegan option)

Tuesday: Asian Turkey Lettuce Wraps from Epicurious (gluten-free if using gluten-free sauces)

Wednesday: Chickpea Saute with Greek Yogurt from the Kitchn (gluten-free, vegetarian, vegan option)

Thursday: Kielbasa, Pepper, Onion and Potato Hash from The Two Bite Club (gluten-free, vegetarian if using vegetarian “sausage” or tofu)

Friday: Philly Cheesesteak Stuffed Peppers from Mrs. Happy Homemaker (gluten-free, low-carb)

Saturday: Date Night – Eat Out.

Sunday: Y.O.Y.O. (You’re on your own.)
