Last weekend we had a couple friends from Minneapolis stay with us while they were in town for a conference. My friend Kate is pretty much a flavor wizard in the kitchen and usually cooks like I do by taking stock of the pantry and whipping up something pretty amazing. (She’s the same Kate who originally taught me what a zoodle was, which eventually resulted in my ever-popular Greek Zucchini Noodles recipe.) She and her boyfriend were arriving around dinner time, so I made my Chicken Coconut Curry and asked them to bring along a dessert. She did not disappoint!

While I know that to some, an amazing fruit salad might not qualify as “dessert,” it’s definitely a dessert in our house, especially when she managed to find all the best of the fruits and then coat them in the perfect blend of honey and lime juice. I’m pretty sure that all restaurants everywhere should just replace their fruit salads with this fruit salad. We don’t need any crazy, tasteless melon balls, or half-frozen strawberries coated in a sugary mayonnaise dressing, we just want straight up fruit with a hint of sweetness.

The best part is that this fruit salad is super flexible. You can pull together whatever is in season, and serve it as a dessert, as a breakfast side, on some pancakes, over ice cream, or alongside dinner. It comes together super-fast, and you can meet almost any dietary restriction, which is usually quite the challenge these days. About 2 bites into the fruit salad, I begged her to let me share the recipe here, and she was happy to oblige. (I may or may not have told her it would make her famous – “Kate of the Honey Lime Fruit Salad” fame for sure.) Do yourself a favor and make this as soon as possible. It’s that good.

Ingredients

Scale
  • 1 cup diced gala apples (approximately 2 apples)
  • 1 cup diced green apples (approximately 2 apples)
  • 1 cup diced mango chunks (approximately 2 mangos)
  • 1/2 cup diced peaches (approximately 2 peaches)
  • 3/4 cup fresh raspberries
  • 3/4 cup fresh blackberries
  • 1/4 cup fresh lime juice
  • 1/4 cup honey

Instructions

  1. In a medium bowl, combine apples, mango, peaches, raspberries, and blackberries.
  2. In a small bowl, mix together lime juice and honey until well combined.
  3. Pour over the bowl of fruit and stir to coat.
  4. Server immediately or refrigerate until ready to serve, up to 3 days. (Fruit may begin to brown after a few hours, but it won’t affect the flavor.)

Notes

  • You can swap in your favorite in-season fruits.
  • Gluten-free: This is gluten-free.
  • Vegetarian/Vegan: This is vegetarian/vegan depending on your personal stance about honey.

    Yum! This fruit salad looks so refreshing. I like how you mixed things up and used some different fruits from the normal melons and strawberries that come in a store bought fruit salad.
